chicken Caesar pasta salad

This creamy Caesar pasta salad is a simple yet excellent summer pasta salad. It's the perfect salad-pasta combo with handmade croutons, chicken, and Parmesan! 

This Caesar pasta salad requires properly cooled pasta before adding it to the greens. A crispy taste, precisely cooked noodles, and a coordinating sauce result. Enjoy!

Ingredient

1. 8 ounces pasta, cooked per package directions -I'm using a Ricciole noodle here 2. 3-4 cups chopped packed romaine 3. 2-3 cups chopped kale 4. 2 tsp olive oil 5. ½ cup Caesar dressing , plus more as needed 6. 2 cups chopped roasted or grilled chicken breast 7. ⅓ cup grated Parmesan

For the croutons (yields 2 cups)

1. 2 slices country or sourdough bread 2. 2 tbsp olive oil 3. ½ tsp oregano

Preheat oven to 400°F.

Dice bread evenly. Season with oregano and olive oil.

Place on a parchment-lined baking sheet. Bake 15–18 minutes until golden, stirring halfway. Remove and cool.

Kale and romaine in a bowl. Add oil and mix. Add half the dressing and mix.

Stir in cooled pasta, chicken, parmesan, and croutons. Top with remaining dressing and mix.
