You can make this potato salad recipe quickly and easily. It tastes great and has an old-fashioned feel to it. For the best taste, make it the day before you serve it. It will be a hit at any BBQ or gathering!
– 5 pounds red potatoes, chopped – 3 cups mayonnaise – 2 cups finely chopped pickle – 5 large hard-cooked eggs, chopped – ½ cup chopped red onion – ½ cup chopped celery – 3 tablespoons prepared mustard – 1 tablespoon apple cider vinegar – 1 teaspoon salt, or to taste – ½ teaspoon ground black pepper
Putting potatoes in a big pot and adding salty water to cover them. Bring the pot to a boil. Lower the heat to medium-low, and let it cook for about 10 minutes, or until it's soft. Drain. Put the potatoes back in the pot that is now empty to dry out and cool down.
The ingredients you will need are pickles, hard boiled eggs, red onion, celery, mustard, cider vinegar, salt and pepper and all of these should be put in a large mixing bowl. Stir and add the cold potatoes in it.
For the best taste, it’s advised that potato salad should be placed in fridge so that it can cool for sometime or even be left in the fridge the whole night before it can be served.
